And what country can preserve its liberties if their rulers are not warned from time to time that their people preserve the spirit of resistance? Let them take arms. The remedy is to set them right as to facts, pardon and pacify them. What signify a few lives lost in a century or two? The tree of liberty must be refreshed from time to time with the blood of patriots and tyrants.

Imagine the effort and cost of building those by hand.

Exactly what I was thinking. Lots of warfare and strife, repelling invaders and the like. The world is always a dangerous place. Imagine the cost of NOT building them.
You don't really have to imagine it because there's been a team of folks in France doing exactly that for the last 20 years, and they are nearing completion. Search Guedelon on YouTube for a ton of great videos about the project.
