Cool Steel

  1. I'm halfway looking for a cleaver like this, but it must a) not be made in china and b) have a good weight and c) be high carbon steel (not a fan of some of the stainless options). This ain't it. Reviews on Amazon talk about the fragile blade chipping on rabbit bones. I want something heavy that'll chop thru bone and still keep a good edge. Still looking. BTW - I'm not a stranger to paying $200 or more for a good kitchen knife. Just hate ordering over the internet for something I can't hold in my hand and test first.

    1. These Japanese brand names that you have never seen before are a good hint that it's made in China.

  2. Chinese companies important Japanese steel (I wonder if they even take that step) to call it a Japanese knife
