  1. A nakiri is the most versatile knife ever. A halfway decent one will take a razor edge and make prep work a breeze. But you need to learn the technique. It’s not a cleaver, nor is it a pry bar. You don’t rock the blade hardly at all and you never pull sideways at the bottom of the cut. Find a nice white nylon or bamboo cutting board for it. Even the Wusthoff 13cm is a great one, perfect for smaller hands… which could be why their price has tripled in the past 7 years.

  2. Any legitimate Japanese knife would cost, at a minimum, 10x more than $24.90.

  3. For the 15 years before I retired from the working world, I was an independent manufacturers sales representative for a good amount of housewares companies. Kia is a centuries old Japanese knife and sword manufacturer. Many years ago, Kia started an American branch called Kershaw Cutlery. Kia also purchased American manufacturer Kershaw. This knife is legitimate. If you want an example of hand-made Japanese cutlery, this will fill the bill.
