Roasting some cherry tomatoes this evening.

    I do likewise but I put them on parchment so they not stick to the pan.
    I also lightly sprinkle with salt to increase the tang and heat.
    Then I pack them into jars and fill with olive oil.

    1. Nice touch. I'd go an extra nickel with a bit of basil and a hint of garlic.

  2. Excellent – I can just smell it! My wife does the same with a little onion and peppers, then into the food processor to be used as tomato paste/sauce or as soup. Mmmm.
