  3. Really authentic tamales are made from the hog's head - that meat is really tender, fine-grained. The ladies I've seen doing it just chuck it into a pot an boil it down, then pull it out and start pulling off the cheek meat. Yum.

  4. Definitely tamales. My grandma used to make them so even the corn shucks didn't go to waste ( depression era you will learn soon enough) add them to chili and you have what is known as a full house. At least in Tennessee or Appalachia. Guess it would be the same in Texas. Don't mess with either of us.

Once when I was living in San Antonio and Dad was a Lt Col in the 437 Military Airlift Wing in Charleston he had me go to a Tamale factory and get a couple of large cans of Tamales and meet some of his guys at the MAC Passenger Terminal at Kelly AFB and they did a C-141 Tamale express straight to Charleston. Hot from the kitchen!
