My favorite cut are the shoulder chops, fried in bacon grease, heaven on a plate. Usually have her leave the hams whole, that way they can be deboned, marinated with garlic clove stuck into the muscle, olive oil, salt, oregano, and lots of fresh squeezed lime juice, leave in fridge covered for 5-7 days, roasted in a dutch oven on an open wood fire. Cut that baby with a fork almost so tender and juicy, tastes like the finest cut of prime beef when your done.
