The trick is to preheat them and to use them upside down from normal expectations, withe the shallow pan the bottom where you put your loaf of dough, score it, and then cover with the preheated main part.
Pro-baker said it so saved them from burning their hands and was easier to keep clean.
Can confirm. King Arthur's Flour has a Dutch oven recipe that works for the cast iron, and links to a dough recipe which holds for a week to give a sourdough tang
During a power outage I kept the house at fifty during 5 days in the winter by putting that and my other pieces of cast iron on the gas stove on low. The radiant heat spread out nicely.
