    Got a good hot smoker, then a few years later wanted to do some cold smoke bacon. The hot smoker could not work at low enough temps, about 80 - 90 degrees, so I designed and built one. Works like a charm, 80 degrees at the exit vent. Smoked but not cooked and can smoke cheese and delicate fish, too. Now moving out of Seattle to the Lower Yakima Valley and I will be able to do a loooot more, including stuff that looks like the above. Yum!

  5. If that IS bacon, it's like none I've seen commercially available. In fact, I have simply given up on bacon, as much as I used to like it. Even the priciest bacon in most stores these days are just 85% fat, detestable stuff. It just curls up and shrinks into nothing in a skillet, and I'm not going to waste any more money of pounds of pig fat.

    1. Benton’s in Madisonville, TN is the best bacon I’ve ever eaten. Mr. Allen still does things the old fashioned way. All of his hams and bacon are naturally cured and smoked and all of his pork is locally sourced.

    2. Burgers bacon. Cooks flat, very little shrinking and is delicious. Burgers smokehouse California Missouri.
