    1. Light salt, fresh ground black pepper, onion powder, in that order 1 hour before cooking while you have them resting outside the fridge… YMMV

    2. That is in fact Montreal Steak Seasoning. Sopping up the liquid from the steak plus the seasoning when it's right off the grill with sourdough is an insanely delicious thing.

  4. About to fire up the BGE where I will grill a 2” NY steak covered in MSS at 600. 4 minutes each side, shut down and leave it in the BGE for another 4 minutes, then let rest for 10. Damn skippy!
