  4. Looks like a tomahawk. I cooked one to perfection a couple years ago. Secret is reverse searing with oven and grill.

  5. Butter sear with sprigs of thyme in a cast iron pan after the internal temp has reached 140 degrees. I will do one on Black Friday and another one on Christmas eve. I am feeding 3 and always have leftovers.
