And what country can preserve its liberties if their rulers are not warned from time to time that their people preserve the spirit of resistance? Let them take arms. The remedy is to set them right as to facts, pardon and pacify them. What signify a few lives lost in a century or two? The tree of liberty must be refreshed from time to time with the blood of patriots and tyrants.
First off, here's the recipe: http://www.hangryq.com/2017/05/23/tacosalpastor/ The Super Skewer looks like a quick welding shop project, but you do NOT want to use a galvanized timber baulk spike as the stem nail. Stainless, or brass. The thing at Amazon looks more practical and is half the price.
Look up the other 5 dozens Tacos al Pastor recipes and get a feel for the whole thing. I'd try the loaf method with much less meat first, until you get the marinade the way you like it.
Looks to me like a big long complex job, you'll need a long super sharp slicing knife, marinate for a couple days, hit the mexi-mart for the right ingredients. And then ... looks like bliss when it all comes together. Should feed at least 8 people.
The inner height of the older model of a Weber Genesis 2 gas grill in 10.25", so you could do this with your smoker box on the side and indirect, 1 end burner set on lowest setting.
Interested to see how your experience turns out, but...... I'd rather use my rotisserie skewer instead and let it slowly turn and self-baste as it smokes. Seems to stay juicier that way, and also gets a nice even bark to it.
