Dip It

  1. My hungry self sees Mexican "birrea" a stew-like beef or goat treat. Usually served up as a taco with sauce for dipping - "au jus" as it were!
    Reminds me of several Latin variations including Venezuelan "pabellón" served in a corn cake or plated meal with beans, rice and plantain. Other goat - "cabrito" - recipes such as Peruvian "Seco de Cabrito" is a not to be ignored option at a Latin restaurant. Just let the rice and yuca soak up the grease.
    While not as authentic, most recipes calling for goat, serve up tasty if prepared with beef. Seasonings such as cilantro & beer add their own authenticity!
