Getting pretty far out of the water there. Imagine falling off and then trying to get back on.

  2. Not a custom built racing boat. Their weight vs the total weight of the boat isn't going to make a big difference. So stay inside the safety wire.
    The type, weigh and depth of the keel is what is or isn't going to keep that boat upright against the pressure of the wind on the sails.
