And what country can preserve its liberties if their rulers are not warned from time to time that their people preserve the spirit of resistance? Let them take arms. The remedy is to set them right as to facts, pardon and pacify them. What signify a few lives lost in a century or two? The tree of liberty must be refreshed from time to time with the blood of patriots and tyrants.

Corn Chowder. Looking forward to making some of this in the colder weather. And Split Pea Soup. Beef Stew. It goes on and on!
Being Cajun, gumbo is THE definitive cold-weather soup. I do chicken & sausage or seafood (shrimp) gumbos. But I have a constant lust for split pea soup with a smoky meat interspersed therein.
Peruvian shrimp chowder - "Chupe de Camarones" - is near an "end all-be all" soup as can be found. A real nap-inducer. In addition to shrimp, typically includes cubed potatoes, corn, evaporated milk, Feta cheese, poached eggs, green peas and rice. Seasoned with oregano and yellow (aji amarillo) pepper. Easily adapted to individual taste, hard to find a Peruvian cook who doesn't have their signature method of preparation. A restaurant staple, a well filled bowl will cost about $15. Test drive a bowl or two at a Peruvian restaurant then rattle pots & pans and fix your own - it's rather simple.
I've never made corn chowder, any good recipes! My wife has a season vs food type thingee and does not like chili, chowder-soups in the summer because it's the wrong season... I don't have that problem. I've been enjoying beef stew made in the instapot a few times a year....
It don't matter what the weather is for me to jump on some chili. I never thought of dumping it all over fried spuds before so thanks for the idea, might do that for supper tonight.
Oh yeah ... cheesy soups with some bread on the side ... one of my favorite cold weather side dishes.

Hard to find a Peruvian of any type or style - unless you're in Peru.

ReplyDeleteCan't find dry yellow peas anymore whole or split. They are my go to for pea soup. Better flavor than the green peas.

Split pea soup is for bland Yankees. No flavor, just mushy.
