      I guess: seared then grilled, with a dry rub.

  3. That looks like sous vie (try it!) at 135 for a few hours then quickly grilled at surface of the sun hot to caramelize and mark the outside. Salt and Pepper is all one needs. Always cut across the grain like pictured.

  4. was a place NYC W13th st, cafe loup, served sliced steak in a brown sauce over a pile of ff's, gone with the virus. damn.

  5. Looks like skirt steak. See, you can make an inexpensive cut (compared to other cuts) of beef tasty.
