  3. I tried Chicago steak seasoning and didn't like it as well as I liked the Montreal steak seasoning.

  4. Dry brine with Kosher salt overnight uncovered in refrigerator, 500 degree cast iron pan for 2 min each side. That's all I need.

  7. Get it from the Spice House in Chicago. You'll have to ask for Steakhouse Smoke Seasoning, they can't call it Chicago Steak anymore, but their stuff is the original Grandma Ruth Penzey mixture. The one here is a knockoff of the now 50+ year old standard Old World 3rd St recipe- made first in Milwaukee!

    Hint: don't buy it from Penzey Spices. Yeah, same stuff, but Bill's a twit.
