  1. BONE IN RIBEYE!!! That strip of meat on the outside of that fat marbling is the best piece of meat on the cow! My Dad's favorite was always the bone in rib eye! NICE!

  4. The cap meat is the spinalis dorsi. It IS the best meat on a cow. Higher end restaurants and meat purveyors are offering it, until recently cattlemen and butchers kept it for themselves.
