I used to do that once upon a time. Throw the carcass and wings and whatnot into a pot with some onion and celery, and it ended up with about the same color -- maybe a bit more yellow.
Then I'd use some of it to make a nice turkey & barley soup. The rest would be frozen in ice cube trays, and I'd keep the cubes in a freezer bag, to add flavor to sauces and other soups.
I've got the remains of 5 turkey breast in the freezer to boil down.
