Actually, it's because the wind may not blow and it might not be blowing to get you where you want to go. Those square riggers don't go to windward well. So it's difficult to stick to a schedule quite often.

Having done that on a small barkentine, I don't recommend it. I did it on a sunny day off Waikiki, going out on a yardarm in the Southern Ocean is inconceivable.
Why the economics of sailing ships lost out to steam. The wind is free, the food and wages for the huge crews needed isn't.
