One of this summer's resolutions: Learn to make great paella

    Wasn't sure if it was really "paella", but it tasted good.

  2. My Son and his wife went to Barcelona on a foodie tour and went to Paella school and I still have not got my Paella.

  4. The big problem with cooking Paella is carefully timing the adding of ingredients so everything is neither over cooked nor under cooked at the end. It's a problem I have not really fully solved. I hate over cooked sea food with perfect rice and crunchy vegetables.

  5. The hardest thing to add is patience. You have to wait for it to dry up and then for the socarat to caramelize and then just the right moment when the socarat becomes crispy.
