That's Wild

 




  • Ingredients: 100% Iberico Pure Breed Pork Ham, Mediterranean Sea salt. Cured for 16-24 months. Minimally processed. HOOF REMOVED ACCORDING TO US LAW. 
  • The iberico acorn-fed shoulder ham is a single piece obtained from the forelimbs of the Iberian pig, characterized by its streamline shape, the fineness of its shaft, with a black hoof, soft shiny fat and smooth texture.

  1. Fed on the acorns of Quercus rotundifolia, but the trees that make the sweetest acorns are fenced off from the pigs. Their acorns are collected and used to make Licor de Bellota.

  2. I was in Madrid in 2009 and visited one of its large department stores 'El Corte Ingles' and they sold these, for $USD750.00 for a hock.

    But, God forgive me, the stuff is fabulous. No man should die before drinking beer and eating Spanish ham. The many outlets of Museo Del Jamon are OK, not great, but OK. If you like it, look harder and you'll find the Real Thing.

  3. I grew up curing hams. I do not think you can make a cured ham worth over $300.

    1. Now, now, tastes differ, I don't criticize how you spend your fun money and I only bought it by the small plate for maybe $30 each.

    3. What is unappreciated here is that at times $$$$$$$$ does make a difference. Many years ago while in Paris, I bought a bottle of Sauterne for I don't remember how much, but it wasn't cheap. It stayed in the basement for years until one Thanksgiving I decided to open it up. From the first sip there was the eyes wide open, mouth open in amazement, OMG moment it was that good.

  6. I lived in Spain during the sixties, and married una Sevillana (a girl from Sevilla). In all my eighty years I have found that Jamon Ibérico, especially Jamón Ibérico de Bellota is addictive. They are undoubtedly the worlds best, and to all who believe that ham should never be as expensive as these hams have never experienced the delicious, deep richness and complex flavor produced.

    1. Ditto. Mrs. & I went to Spain in 2017. Took the bullet train everywhere. Starting with Madrid, we went to Toledo, Sevilla, Barcelona and finished up back in Madrid. We liked Sevilla, for sure. The things they do with pork and seafood in that country are not to be believed unless you've tried it.

      I also did a walking tour of the Civil War events in Barcelona led by a history prof whose grandparents were active participants on the Republican side. The things they did to each other in that country during the Civil War are not to be believed unless you've looked into it deeply, which I subsequently did. Madness.
