  2. It appears very similar to Peruvian "Lomo Saltado" - beef strips stir-fried with tomatoes & onions. Seasoned with cilantro, yellow hot pepper paste. Served with rice and topped with French fries. It's in some top-five of Peruvian meals with every mother & restaurant with their having "secret recipe". Trademark if not oddity of Peruvian cuisine is double-starching of rice and potatoes in a given recipe.
    "Lomo" typifies Chinese influence on Peruvian cooking. In Peru, "Chifa" style neighborhood restaurants are as ubiquitous as 7-Eleven stores in the US. Chifa is also an adaptive style of Chinese cuisine not often found in the US.
    Admittedly I'm prejudiced but Peruvian cuisine is an undiscovered world class wonder. Just get past doubling up on rice & potatoes!
