  3. I use mine for small steaks all the time. Love that little pan.

  4. The problem is, keeping the pan hot enough to create the char on the second side, after slapping that meat down on the first side. It cools the pan down enough where you can't get the char for the second side. That's why you need a grill with enough room to flip it over to a section of grill that's still really hot.
