Roasted corn is the best. Properly done it needs no accompaniments. I roast them with the husks on. Soak them in water for a half hour or so after slightly opening them to remove as much silk as possible. Grill at high temp, turning only when the fire side is starting to get dark brown, almost black. Let cool until you can handle them without scorching your fingers. The kernels should be nicely browned. Butter and salt to taste. Personally, I use neither. The roasted kernels have their own uniquely enjoyable flavor.

I usually microwave the unhusked corn, three minutes for one 1 or 2 ears and four minutes for 3 ears. After I let rest for a few minutes (they are hot!) I cut the butt end off & shake to drop the corn put and leave the silk & husks behind.

If them are fresh picked like 15 minutes or less, they got that sweet milk juice in them. Fabulous good eating.
