    1. Unwashed taters will always fry up dark like that, unavoidable.

    2. Potatoes fry dark because they were stored cold. Spuds used for french fries and potato chips are stored in a warmer environment than table potatoes and seed potatoes. The reason is that when they drop below 50 degrees F, the starch begins to convert to sugar. The colder they're kept the darker they fry.
      What does sugar do when it is cooked at high temps???? It turns black!
