  2. For the untrained, that big ol T-Bone is a Porterhouse meaning that the small side of the bone has a large chunk of meat on it. The bone is split form the spine with a piece of rib being what separates the two pieces of meat. Without bone and independently, the larger side is known as a Kansas City Strip. The smaller side is the fillet or tenderloin. For those that wanted to know.
