  4. I once had a pizza in the Pisa piazza while admiring the leaning tower. There is no bad or wrong way to make pizza. There is only better and greater pizza. It is sad that in the wake of Pizzagate, they have sullied the name of the almighty pizza.

  7. Reminds me of how we made pizza at home when I was younger and how my wife makes it every once in a while. The dough is thrown on a rectangular cookie sheet or a flat metal sheet, and then the toppings are thrown on before popping it in the oven. You then serve it on a wooden plank.

    Best in the country (at least according to Diners and Dives) and still flinging dough
    in the air since 1948! Don't think it's possible to fling a square.

  10. In HS I worked at a pizza joint for a summer. They taught me how to roll and toss dough correctly, and the recipe for the dough. We had a brick oven and used classic wooden paddles to put the pies in the oven, move them around, and pull them out. I have an oven stone and a paddle at home and can still mix, roll, and toss a decent crust. I prefer simple: standard herbed red sauce, mozzarella and Romano cheese, pepperoni, onions, bell peppers, and sometimes sausage.
