If you can't actually BBQ, then the next best thing is to read about BBQ

  1. Nah, forget Franklin’s. If you’re gonna wait a long time and you want good BBQ, go to Terry Blacks. That place made me understand why burnt ends are heavenly.

  2. Kansas City BBQ is hands down the BEST in the world and Oscar Bryant's is the best in KC.

A fact that many of you-all may not know, when President Ronald Reagan was in office whenever he traveled to the West Coast, he'd have Air Force One stop and KCI airport, and they'd drive to the eastside and partake in a BBQ meal at Oscar Bryant's. I understand that quite a few celebrities did the exact same detour while going east and west.

  3. Seems like some folks use the words grilling, smoking, and barbecuing interchangeably.

I have never smoked anything and rarely barbecue anything because the clean up is horrendous, but I grill like a sonofabitch all year long.

  4. By all means, do go to Franklin Barbecue. And when you get there, park the car but do not get out of it. Instead, crank it back up and drive it to Louie Mueller's in Taylor. It's probably quicker to drive to Taylor than standing in the line at Franklin. The Mueller family has been doing it in Taylor for many, many decades now. And, it's pronounced MILL-er not MULE-er. You're welcome.

    1. WWW, Franklin gives a mention of Mueller's in his book. The book is not an advertisement for Franklin's restaurant but a tribute to Central Texas Barbeque. I live near Bandera and know the local barbeque.

  5. I have a copy. It is a great guide to crafting excellent barbeque. It is as much philosophy as it is technique and recipes. While it focuses on the South Central Texas version of barbeque using salt, black pepper and Post Oak to season and cook, with the knowledge imparted and understanding of other regional barbeque styles one can create any style of barbeque.

  6. Once you learn to manage the heat, it cooks itself. Not much to it, really.
