I'm happily working through my variety pack I bought last Christmas -- good stuff

  2. El Yucateco sauces are readily available in local Latin stores. Confirmed Texas Pete or McIlhenny Green fan until I tried Cholula Sweet Habanero. All but keep a bottle of CSH on the table. Not much on their other varieties though.
    General cooking calls for home made or store bought Peruvian Aji Amarillo (yellow banana pepper) paste. Use straight from the jar or cut with other ingredients for a wide variety of uses & sauces. Aji Panca – purple pepper has a very low heat index and imparts a smoky flavor to foods. Among other dishes, good with oven-roasted chicken. Seldom use it but another Peruvian pepper, Rocoto, is noted for it’s heat. All peppers mentioned are a staple in Latin stores as a jarred paste or raw.
