And what country can preserve its liberties if their rulers are not warned from time to time that their people preserve the spirit of resistance? Let them take arms. The remedy is to set them right as to facts, pardon and pacify them. What signify a few lives lost in a century or two? The tree of liberty must be refreshed from time to time with the blood of patriots and tyrants.

I'm happily working through my variety pack I bought last Christmas -- good stuff
El Yucateco sauces are readily available in local Latin stores. Confirmed Texas Pete or McIlhenny Green fan until I tried Cholula Sweet Habanero. All but keep a bottle of CSH on the table. Not much on their other varieties though. General cooking calls for home made or store bought Peruvian Aji Amarillo (yellow banana pepper) paste. Use straight from the jar or cut with other ingredients for a wide variety of uses & sauces. Aji Panca – purple pepper has a very low heat index and imparts a smoky flavor to foods. Among other dishes, good with oven-roasted chicken. Seldom use it but another Peruvian pepper, Rocoto, is noted for it’s heat. All peppers mentioned are a staple in Latin stores as a jarred paste or raw.
