Thick Cut

  1. I took a 1.5 lb thick cut apple smoked that I bound, dropped some maple syrup, and put on the smoker for 6 hours at 180 degrees. Good stuff.

  2. Indeed! Nothing better then curing and smoking your own, using meats from critters you raise.

  3. Learned this from a chef: start your bacon in a cold pan, it will not shrink and the rest will not shrink as well. Thought it couldn't work so I tried it and it does work.
