    1. Cook the meat on medium heat for 3 minutes on a side and remove from pan. Chop up shallots and add a "good amount" of butter and the shallots to the pan. With a spatula, scrape up the browned meat residue. If you want, add some chopped garlic. When the shallots start to brown, pour in some sort of cooking sherry or other flavorful intoxicant and some chicken or beef stock and reduce by 1/2. The green stuff is (maybe) chopped scallions.
