  2. I can get about 6 to 9 months out of a Sourdough culture before it gets an off taste.

  3. How do you capture wild yeast(s)? Do they migrate in a herd? Do they hunt in packs? What trap(s) did you use? Did it take a long time to capture them?

  4. I've heard that in old Italian kitchens you don't need yeast, as it permeates the very atmosphere.
