Given the brick walls - for that scale of structure I assume thick tapered walls - and the many rooms, I think the temperature in many of the rooms to be cool and pleasant.
Yes. That heavy masonry construction so the innermost rooms would indeed be chilly. They most likely had the corridors and doors situated as such to promote equilibrium of temperature. They were smarter back then than you might imagine. The book, "The Ten Books of Architecture" by Vitruvius is quite an eye opener.
