  1. Oooh! Aged beefs, just love the meat that way. Butcher supply in Texas sells one way permeable bags, sized to fit different cuts, need a vacuum sealer for setting up the system, really cool idea. I wash the meat with a 50-50 mix of cider vinegar and spring water, hang the meat. let it dry, be a semi shiny film over the surface, bacteria free, put meat in bag, seal, mark down the date, put it in the fridge, or at room temp, min 30 days.The one way membrane keeps out the bad stuff, no spoiling. Handy too, need a juicy rib eye, just grab one, cook that puppy up.
