  1. I think that with the wheel in the air he applied the front brake so the torque generated causes the bike to rotate around the front axle.

  2. Front wheel would have stopped rotating if that was done. Not much mass, it would not have been capable of slowing down instead of stopping.
    I suspect it would probably be chopping the throttle or tapping the rear brake with clutch out.
