  1. Looks tasty, started my hand at cureculture, its surprisingly simple, raise my own hogs, so when butchering one, can select the choicest cuts to cure and age. Just amazing the variety you can create, only uses a couple different safe bacteria starters, and specialized enzymes, it its mostly amount of salt temp and time being carefully adhered too. Once you get the idea of it you almost can not go wrong, and of course the rewards of eating your own cured meats.
