  2. I caught a salmon way back when, we didn't know how to smoke it. What we did was slice the fish into steaks, rub brown sugar and soy sauce on the fish and rest it in plastic bags. Then we smoked for about five or six hours until the fish was dried. Surprisingly delicious. I imagine this jerky might be a huge improvement on our fumbling recipe.
