    The Super Skewer looks like a quick welding shop project, but you do NOT want to use a galvanized timber baulk spike as the stem nail. Stainless, or brass. The thing at Amazon looks more practical and is half the price.

    Look up the other 5 dozens Tacos al Pastor recipes and get a feel for the whole thing. I'd try the loaf method with much less meat first, until you get the marinade the way you like it.

    Looks to me like a big long complex job, you'll need a long super sharp slicing knife, marinate for a couple days, hit the mexi-mart for the right ingredients. And then ... looks like bliss when it all comes together. Should feed at least 8 people.

    The inner height of the older model of a Weber Genesis 2 gas grill in 10.25", so you could do this with your smoker box on the side and indirect, 1 end burner set on lowest setting.

  2. Interested to see how your experience turns out, but...... I'd rather use my rotisserie skewer instead and let it slowly turn and self-baste as it smokes. Seems to stay juicier that way, and also gets a nice even bark to it.
